A stainless cart grill on a breezy patio with its lid raised, burners lit low and blue under the grates, a pale raw steak lying on the grates without sear marks.

Grill
Not Getting Hot Enough to Sear

A grill not getting hot enough preheats for twenty minutes with the lid down and still reads low on the lid dial, leaving steaks gray instead of crusted.

What it
usually means.

A sound gas grill with the lid closed and every burner on high should reach searing heat in about ten to fifteen minutes; many makers print a target in the manual. When it does not, the question is whether the heat is not being made or is being lost. Not made: the gas supply sets the ceiling, so a regulator in bypass, a tank nearly empty, a natural gas line too long or too narrow for the grill, or burners with closed ports hold everything back. Lost: a lid left up, a lid that no longer closes square after a knock or a bent hinge, wind blowing through a cart grill, or a firebox with shields missing. There is also the measurement: the dial in the lid reads the air under the dome, not the grates, and inexpensive dials drift, so a grill can be hotter than it claims. Infrared grills heat another way, and a burner with a cracked ceramic tile or a clogged screen glows dim and weak. On a pellet grill, low heat is usually about pellets and airflow, which has a page of its own.

A technician in a plain gray work shirt fits a new stainless burner tube into an open gas grill on a patio, the grates and heat shields set aside on the side shelf, an old rusted burner with split ports lying beside them, the knobs all at off, daylight, seasonless. The 6 causes, cheapest first

Answer these first

01

What does the lid dial read after fifteen minutes on high with the lid down?

02

Is every burner lit and making a full flame?

03

Is the grill in a windy spot, and does the lid close evenly?

04

Is it on propane or natural gas, and was the gas line recently run or extended?

05

Is it a gas, infrared or pellet grill?

Check these
before you book.

Grill not getting hot enough: 5 checks, and none of them costs anything.

01

Preheat with every burner on high and the lid closed for fifteen minutes before judging.

02

Reset the regulator: knobs off, tank closed, a minute's wait, the tank opened slowly, then relight.

03

Set a surface thermometer on the grates to check what the lid dial says.

Also worth checking

  • Turn or shelter the grill from the wind, and check that the lid closes evenly all round.
  • For a natural gas grill, note whether other gas appliances were running at the same time.

How soon does it need a visit?

Low heat is not an emergency and can wait for an ordinary booking.

6 things grill not getting hot enough to sear turns out to be, from lid up or wind carrying the heat away to infrared burner tile cracked or screen clogged.

The cost guide
  1. 01 no repair

Lid up or wind carrying the heat away

A grill preheated with the lid open, or parked where the wind blows through the gap at the back, never builds heat. Close the lid and turn or shelter the grill.

  2. 02 no repair

Regulator bypass or a tank nearly empty

Both leave every burner short of gas. A regulator reset and a full tank are the first two tests.

  3. 03 low

    Lid dial reading low

Lid dials read dome air and wander over the years. A surface thermometer on the grates tells the real story; a replacement dial is a small part.

  4. 04 low to moderate

    Burners clogged or rusted

Ports sealed by grease and rust cut the flame on every burner at once. Cleaning or new burners bring the heat back.

  5. 05 moderate

Natural gas line undersized for the grill

A long or narrow run from the meter starves a large grill head, worse when other gas appliances run at the same time. The pressure at the grill is measured while it burns.

  6. 06 moderate

Infrared burner tile cracked or screen clogged

A damaged ceramic face or a greasy emitter glows dull and never reaches sear heat. The infrared burner is repaired or replaced.

Questions about
grill not getting hot enough to sear.

How hot should a gas grill get with the lid closed?
Many gas grills pass 500°F on high within about fifteen minutes; the manual gives the figure for your model.
Does the lid dial show the temperature at the grates?
No. It reads the air under the dome, which can be well away from the grate temperature. A surface thermometer shows what the food actually meets.
Would a bigger propane tank make the grill hotter?
No. The regulator sets the pressure, and a bigger tank simply lasts longer. A full tank does help on a cold day.
Our new built-in grill runs cooler than the old cart grill did. Why?
A larger grill head on the same gas line may need more gas than the line can deliver. A pressure check at the grill while it runs settles it.
