A technician in a plain gray work shirt sets a new row of stainless heat shields over the burners of an open gas grill on a patio, rusted and holed old shields stacked on the side shelf beside a clean new cooking grate, the grill cold with no flame, daylight, seasonless.

What the grill heat shield and grate replacement
involves.

Between a grill's burners and its food sits a layer that does most of the flavor work and takes most of the abuse. On many grills it is a row of inverted steel V's, called flavorizer bars or flame tamers; on others a tray of ceramic briquettes or radiants, or perforated heat plates. They shield each burner from falling grease, turn drips into smoke, and spread the heat so the grates are hot from end to end. When they rust through or crumble, drippings fall straight onto the flame, the grill flares at every turn of the meat, and the burners below rust faster. The technician lifts out grates and shields, looks for holes, sagging and cracked ceramics, and checks the ledges they rest on in the firebox, since a shield sitting crooked on a rusted ledge fails again soon. The grease path is followed down to the tray and its cup, which must slope and drain freely. The maker's shields, grates and trays are fitted, the grill is run on high, and the heat is read across the grates with a surface thermometer before the visit ends.

All service areas

Tampa BayFL · 31 areas

Tampa Bay's humidity keeps grease damp on heat shields and flavorizer bars, so they rust through sooner than in dry places, and a flare-up that keeps returning is often the sign that a shield has holes and needs replacing.

OrlandoFL · 30 areas

Rental grills around Orlando are scrubbed in a hurry between guests, and wire brushes wear grates and shed bristles, so grate replacement there often comes with new heat shields and a word about safer cleaning tools.

Miami / South FloridaFL · 47 areas

In South Florida's salt air porcelain-coated grates chip and rust and thin stainless shields pit, so replacements tend to be heavier stainless parts that hold up better beside a pool or on a terrace over the water.

New York MetroNY · 75 areas

New York terrace grills are often compact heads where every part must fit, so grates and heat shields are ordered from the model plate, since a shield even slightly short lets grease drip straight onto the burner.

HoustonTX · 36 areas

Houston's long grilling and smoking sessions bake grease into heat shields and ceramic briquettes, and once briquettes crumble or shields warp, uneven heat and flare-ups follow until a fresh set goes in.

ChicagoIL · 50 areas

Chicagoland grills that spent the winter with grease left inside often come out with grates and shields scaled by rust, and a spring replacement puts fresh parts over the burners before the first cookout.

Los AngelesCA · 95 areas

Los Angeles grills cooking every week wear out flavorizer bars and grates on a steady cycle, and replacing them before they break apart protects the burners below from dripping grease and falling scale.

San DiegoCA · 31 areas

On San Diego's coastal patios cast-iron grates rust overnight in the marine layer unless oiled, so many owners move to stainless grates and shields at replacement time, while inland grills mostly need them for heat warping.

San Francisco Bay AreaCA · 74 areas

Bay Area grills stand anywhere from damp city decks to hot inland yards, so grates and radiants are matched to the model and the weather: heavier stainless near the fog, sturdier shields where inland heat warps thin ones.

Questions about
the grill heat shield and grate replacement.

How do I know my grill's heat shields need replacing?
Holes you can see light through, edges that have gone lacy, bars that sag onto the burner, or ceramic pieces that crack and crumble. If the grill has started flaring up over every piece of meat, look at the shields before anything else.
Are grill grates and heat shields the same from one make to another?
No. Each maker sizes them to its own firebox and burner spacing, and even two models from one make can differ. Universal parts often sit loose or block a burner's flame, which is why the technician fits the maker's own.
What should never go into a grill's grease tray?
Water to put out a flare, and foil liners where the maker says not to use them, since they can block the drain and pool grease. Empty the cup and scrape the tray regularly, with the grill cold.
